Das wertvolle Getreide kam um 1500 in das Gebiet, das als italienische Camargue bezeichnet wird. Hier hat es sich perfekt etabliert und stellt einen atypischen Reisanbau im italienischen Panorama dar, der dem Rotationstyp entspricht, dessen Produkt jedoch qualitativ besser ist. Die Anbaugebiete, die sich größtenteils im Umkreis der Grande Bonifica Ferrarese befinden, sind Jolanda di Savoia, Massa Fiscaglia und zwei Ortsteile von Codigoro, Mezzogoro und Pontelangorino. Die am weitesten verbreiteten Sorten sind: Baldo, Arborio, Carnaroli und Volano.

Reis besteht zu 90 % aus stärkehaltigen Substanzen, aber die übrigen Bestandteile, Proteine, Fette, Rohfasern und Mineralsalze, sind für die Ernährung ebenso wichtig. Die Reisproteine sind also in ihrer Zusammensetzung und Assimilierbarkeit qualitativ besser als die aller anderen Getreidearten.
